Linda McCartney, Cheese and Brittle Bones

Linda McCartney was an American photographer, musician and animal rights activist. She married Paul McCartney of ‘The Beatles’ and ‘Wings’, on March 12, 1969. In 1995, Lady McCartney was diagnosed with breast cancer and her condition soon grew worse as it spread to her liver. She died on 17 April 1998 at the age of 56 in Tucson, Arizona. (1)

A strong advocate for animal rights, she lent her support to many organizations such as PETA (People for the Ethical Treatment of Animals). She promoted a vegetarian diet through her cookbooks: Linda McCartney’s Home Cooking, Linda’s Kitchen, and Simple, Inspiring Recipes for Meatless Meals, and her website, lindamccartneyfoods.co.

On this website there are various vegetarian recipes including one for ‘Cheese Palmiers’.

Ingredients

8 oz (250g) frozen or home-made puff pastry (alternating layers of dough and melted butter)
8 oz Cheddar Cheese grated
black pepper

These light cheese-filled pastries just melt in the mouth. Perfect as an appetizer to nibble before a meal, you will find they disappear like the melting snow.
