The health risks are of course most important but they are also defrauding the consumer - charging for a premium grade meat and providing lower grade -- ah the morals of private enterprise -- we can go on about the problems in government and unions but this is one one bit of evidence why we cannot trust our lives to private enterprise alone

From the sound of it, there really isn't anything bad about using an enzyme to glue meat together other than if you under cook it. There isn't anything directly endangering health from the enzyme itself... unless someone has some additional info on it?

The real issue here is not necessarily the safety of the meat glue itself. Instead what should really worry us is the fact that these scraps of meat, glued together, are being sold to restaurants and consumers as solid pieces of meat. If you’re at a restaurant and order a steak medium-rare or rare, and it happens to be a glued together steak, you’re now potentially exposing yourself to all of the microbial contamination that might not be thoroughly cooked. The advantage of a real steak, and the reason you can order it medium-rare, is that the potential contamination is all seared off while cooking. The inside, even though it may not be fully cooked, has never been touched by a potentially contaminated butcher’s knife. The same is not true of a meat glue steak.
Don’t kid yourself, the scraps would still get used. The trick here is that the meat wholesaler can fetch a higher price by gluing them together, but risks the consumer’s health in the process.

OK, anyone who didnt already see this is a fool. They have been selling you deli meats for years in these near perfect cylindrical blocks, with muscle grain patterns that are condradictory. This article is really nothing new if you have been looking at what you put in your mouth.

This makes sense, a few years ago I was buying some meals that were made by Betty Crocker, they were outstanding, I would keep 10 or 12 meals in the cupboard. Then one day Betty Crocker changed the meat in the meals to what I would call scrap. I called them and complained about the scrap meat and I quit eating them. I gave 10 meals to a food bank after explaining why I wouldn't eat them. Now I will buy nothing with the name Betty Crocker on it. This story explains what was in those meals.

Thank You for posting this article... A couple months ago my girlfriend was buying chicken breasts... I thought it was pretty good, but told her. This is chicken but it is not a chicken breast. I told her it was pieces of chicken poured into a chicken breast mold... I was right, if you look at the label on the bag it even says so... It's just not safe to buy any food products these days without fully reading the labels. I make it a point not to eat redmeat.

from farm to plate a horrid experience.
I had been a meat Eater because, like others I believe I needed it being an multi-sport athletic later specialized in power lifting, until I was 45 years old and then started a bodybuilding journey, it was fun.
Everywhere people of sports ate MEAT,
Except ME,
I STOPPED 1979, very few believed because of my size!.
But Bill Pearls,Arnolds, Mentor was a Vegetarian world Champion body builder.

Both my brother and I went vegetarian over 2 years ago. We were big on eating wings and what not. But then we started thinking of the issue from a health, moral, and environment aspect (strangely while eating home-delivery wings)--and just made a pact to go cold-turkey. Like you, we do not regret it all.
