Thanks to Current, long overdue hidden truths about our food industry are finally emerging, along with the detrimental effects to people and all life forms that Mother Earth sustains.
I try to make at least one healthy change each week. So that after one year I will have made over 50 positive changes to either heal myself, help the environment, or inspire someone to adopt this practice, and at the same time eliminating 50 less than desirable choices.
Another eye-opening view on this topic is the documentary film "The Future of Food".

Onechance, that is when I eat meat. I mostly eat fish and chicken if I am eating meat.
We have 22 acres and this last weekend we decided to fence our acreage so we can get some animals of our own. We are planning on purchasing some cattle, some sheep, and some goats. I have fallen in love with goat cheese.
I have been making this really awesome salad the last month that people in my clan have been devouring like there is no tomorrow.
Here is my recipe for Organica Dark Greens and Lentils Salad:
Organic Dark Leaf Lettuce Mix 1 to 2 pounds (depending on the number of eaters)
Organic Spinach 6 to 8 oz
Shredded organic carrots 6 to 8 oz
12 oz of cooked and chilled lentils
8 oz of roasted organic beets
1 bunch organic scallions
Organic Sliced Almonds 4 to 6 oz (to taste)
Organic Pignolis 4 oz (to taste)
Organic Blue Cheese 6 oz
Organic Goat Cheese 8 oz
Grated Asiago Cheese 4 oz
Organic dried cranberries with orange zest 4 oz
Organic Roasted Garlic CroutonsDressing:
Organic Buttermilk 8 oz
Organic Mayonnaise 4 oz
Organic Ranch Dressing MixMix up and chill till thickened
Add dressing to salad and toss just before serving, the idea is to lightly coat the lettuce with the dressing, don't drown it.
This salad can be a meal in itself because it is high in protein from the lentils and the cheeses and nuts.

When I consider eating meat, I just think of what Bush has done for the environment, then the thought of it makes me sick to my stomach...
I like the idea of growing my own, vegetables, that is...when I was a kid, we had a one acre garden and the food from that was extraordinary. I would like to get back to that...instead of the greenhouse stuff...but, living in the city makes it tuff..tuff..tuff...
I didn't realize cattle were so gaseous...but we still have to evolve into alternative transportation to get off oil addiction and help the environment...
