Everything old really can be NEW again, even something as lowly and categorically reviled as cooking fat. While we generally take no issue with cooking oil when it crisps up our food, we tend to run in the other direction when grappling with how to recycle it. Fortunately, a few restaurants are laying the groundwork for what could become an artisanal "cottage industry" -- maybe you'll agree!
