This is one of my very favorite cook books. It's from Cook's Illustrated, and they take a really close look at about 1,000 recipes and figure out the best way to make the classics. They explain all the different things they tried, what went wrong with those, and what worked best about the one winner. They've done the experimenting for you! Everything I've made from it has been a winner - buttermilk pancakes, biscuits, mac and cheese. This is a great gift for the cook in your life!
