Pork Week at Salon

RebeccaTraister
It's our inaugural celebration of the pig, and I've been learning to make my own bacon.

    • I liked this story thanks for posting and the book recommendation. People like mishka don't need to be crying over the pig you ate instead he or she eat another tofu burger and shut up.

    • I heard no names mentioned regarding pig belly suppliers known for treating their pigs well, feeding them acorns and grasses and then, "dispatching" them with dignity. I believe the term more commonly used is slaughter.

The "celebration" of the pig begins in the segment of our industrialized food chain known as the factory farm. I refer to the case at the Wiles Hog Farm in Ohio and coverage of the infamous Smithfield Farms pig factories, to name a few. The places where pigs are confined in filth infested concrete buildings and gestation crates, rolling in their own excrement with open sores from rubbing on cages. They continue to be "celebrated" by being hoisted up on chains, having their throats slit and their bodies carved up while they are still alive.

Aaah...all this so we can continue to "celebrate" them by noshing on a high cholesterol slab of bacon.

This is by far one of the best examples of journalistic whitewashing I have ever seen. It is disturbing to know that even the most intelligent amongst us remain impervious to the pain and suffering of other species.
