Killer Brownies

2 and 1/2 sticks of unsalted butter (1 and 1/4 cup)
3/4 cup of unsweetened cocoa (better the cocoa, better the brownie)
2 cups sugar
4 eggs
1 cup all purpose flour
pinch of salt
1 Tablespoon vanilla extract
Melt the butter slowly over low heat in a deep 2 quart saucepan. Add the cocoa to the melted butter, stir with a long-handled wooden spoon. Stir in the 2 cups of sugar, using the same pot. Cool slightly. Add the eggs, one at a time, stirring well after each. Slowly stir in the flour and pinch of salt. Finally, add the vanilla and stir. Pour mixture into a greased 13" by 9" inch pan, spread dough to edges of pan and bake in a 350 degree oven for 25-30 minutes, or 20-25 minutes, depending on your oven. Do not over-bake, brownies continue to cook slightly, after removed from oven.
Icing (optional, but guaranteed to deliver the death blow):
3 squares unsweetened chocolate (better the chocolate, blah, blah, blah)
1/2 stick unsalted butter (1/4 cup)
2-3 cups confectioner's sugar
pinch salt
1/4 teaspoon cinnamon
1 teaspoon vanilla
2-3 Tablespoons cold water
Melt chocolate squares with butter in small pan or microwave safe bowl. Add confectioner's sugar, cinnamon and pinch of salt, alternately, with vanilla and cold water. Mix until of spreading consistency. The amount of water may vary, depending on how you like your icing. Spread onto cooled brownies. Cut brownies into squares, serve, and have phone handy to dial 911.

Looks like a good one incredulous. I like that it calls for butter - not for margarine. Looks like melt in your mouth time.
I'll add one thing to it though. And that would be to NEVER use artificial vanilla in anything you plan to eat. Horrible stuff. The inverse of that is also true. If you have a source to buy vanilla that was packaged where it grows, that will be superior to any of our major brands here. A brother in law sent some vanilla years ago; from Mexico I think. I've not tasted anything even close to it, before or since. You wouldn't believe the difference.

totally agree, never use anything but the real thing. I actually have beans that I create an extract from...with Grey Goose vodka...pretty good, gonna have to try that Mexican variety though.
