It isn't just Paula, it is the culture. When it was all agriculture, you could get away with eating that way. When you are busting your hump from before dawn to after sundown, you use a great many calories and stay fairly slim. You don't have to worry about cholesterol because your metabolism is like a furnace and you don't have plaque building in your arteries.
My daughter- in-law is from New Orleans, and she says if it isn't deep fried it is smothered in butter or cream. Come on, they deep fry their pickles and their green beans. It is all a matter of taste I guess.

I know you are in Texas and not Louisiana, but maybe you can answer this question.
How on earth do you all deal with the heat generated by all that deep frying? Is it just that you are all used to higher temperatures regularly?

I don't eat fried food. But yes I know a few guys that work in kitchens that have gone to the ER from the heat in the summer time.

Where I live we get heat stroke at 85 degrees, that is why I ask. I can't bear to heat up the kitchen in the summer. The only hot foods I eat in the summer is what can be cooked out on the grill. Of course it is generally cool here even in the summer, so we don't have air conditioning - why have something you will use 2 weeks a year.

Nope, I live in the other "Cowboy" state, but in the higher elevations. My town sits at 7200 ft on a plateau surrounded by even higher elevations. My brother-in-law in Illinois describes our climate as winter and 3 weeks of bad skiing weather.

The cold gets me too, and I have lived most of my life here. My sister lived in Brownsville, TX years ago. She passed out, just going from a nice air conditioned store to her car in the summer. Her husband had to do the shopping for a while that first summer they were there, since he was a native and could get to the car and remain conscious at the same time.

the heat never has bothered me. But My Wife is from W.V. and the first couple of years we were down here She was very HOT! to say the least. Now She just goes with the flo. We do have AC in the house now sense I have become disabled. but we only use it six months out of the year.
