According to this article the big draw for many attending Middle Eastern states was not peace between the Palestinians and Israelis.
The real interest of many moderate states in the Middle East is to get the US to help slow the spread of extremism in the region and especially curb the influence of Iran.
They are worried they are losing their youth to Islamic radicalism and see the Israeli-Palestinian as one of the biggest issues used by radical recruiters to inspire hatred of moderate Middle-Eastern states and the US.
So even though it is unlikely that a long standing peace will come out of these talks at least it reengages the US in the region in a positive manner that doesnt include bombs and guns

back at home, an Israeli airstrike targeting a Hamas base killed at least 2, up to 10 (depending on which account you read), and Hamas continues to resist any progress made in Annapolis, firing mortar shells and Qassam rockets at Israel. No one said this was going to be easy, I suppose.
