  • Navajo Fry Bread

    * 3 cups Flour
    * 1 tsp. Salt
    * 1 tbs. Baking Powder
    * 1 1/2 cup water
    * 1 tbs. Shortening (cut in)

    Using the ingredients from either version above, mix ingredients and let sit for 10-15 minutes.

    Break off a ball of dough about golf ball size and pat out no thicker than 1/4 inch. (In some tribal traditions a hole is always made in the center which has spiritual significance)

    Fry in deep hot oil to a light golden brown, turn once to brown both sides. (Oil is hot enough if a small test piece of dough dropped in the oil begins cooking almost immediately and rises to the top.) Drain bread well and pat with paper towel to remove excess oil. Keep covered in a bowl while cooking to keep bread warm.

    Serving - Usually eaten like bread with soup, stew or posole

    Variations - Eat with honey, powdered sugar, cinnamon.

  • Lemon Spaghetti

    1 pound spaghetti
    2/3 cup olive oil
    2/3 cup grated Parmesan
    1/2 cup fresh lemon juice (about 3 lemons)
    Salt and freshly ground black pepper
    1 tablespoon lemon zest
    1/3 cup chopped fresh basil leaves

    Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.

    Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.

  • Pigeon Pea and Calabaza Stew

    SERVES: 4
    INGREDIENTS
    1/2 pound dried pigeon peas (1 1/2 cups, see Note), soaked for 2 days and drained
    2 cups chicken stock or low-sodium broth
    1 cup water
    1/4 cup Classic Sofrito
    4 large cilantro sprigs
    One 2-ounce piece of smoked ham
    1 pound calabaza or butternut squash, peeled, seeded and cut into 1-by- 1/4-inch matchsticks (1 cup)
    Salt and freshly ground pepper

    DIRECTIONS
    In a medium saucepan, combine the pigeon peas with the stock, water, Classic Sofrito, cilantro and ham and bring to a boil. Reduce the heat to low and simmer, skimming occasionally, until the peas are tender, about 2 hours. Add the squash and simmer until it is tender, about 10 minutes longer. Season with salt and pepper. Remove the ham, cut it into 1/2-inch pieces and return to the stew. Discard the cilantro sprigs and serve.

    Volcano Meat Loaf

    4 to 8 servings

    2 pounds ground beef
    1/2 of a 10-1/2-ounce can condensed cream of tomato soup
    1 (1-ounce) package dry onion soup mix
    1/2 cup dry bread crumbs
    1 egg, beaten
    1/2 cup water
    3 cups warm mashed potatoes

    Preheat the oven to 350 degrees F. Coat a 9" x 13" baking dish with nonstick cooking spray.

    In a large bowl, combine the ground beef, tomato soup, onion soup mix, bread crumbs, egg, and water; mix well.

    Divide the meat mixture into 4 equal amounts and shape each section into a miniature volcano mountain. Place in the baking dish and bake for 1 hour, or until cooked through.

    Increase the oven temperature to 450 degrees F. "Frost" each volcano meat loaf with mashed potatoes, creating a crater in the potatoes at the top. Return the volcanoes to the oven and bake for 10 minutes, or until the mashed potatoes are golden.

    SERVING TIP: Let the kids fill the craters with gravy or ketchup to make lava flows from the tops of their volcanoes!

    3 kg dog meat -- * see note
    1 1/2 cups vinegar
    60 peppercorns -- crushed
    6 tablespoons salt
    12 cloves garlic -- crushed
    1/2 cup cooking oil
    6 cups onion -- sliced
    3 cups tomato sauce
    10 cups boiling water
    6 cups red pepper -- cut into strips
    6 pieces bay leaf
    1 teaspoon tabasco sauce
    1 1/2 cups liver spread -- ** see note
    1 whole fresh pineapple -- cut 1/2 inch thick

    1. First, kill a medium sized dog, then burn off the fur over a hot fire.
    2. Carefully remove the skin while still warm and set aside for later (may be
    used in other recpies)
    3. Cut meat into 1″ cubes. Marinade meat in mixture of vinegar, peppercorn,
    salt and garlic for 2 hours.
    4. Fry meat in oil using a large wok over an open fire, then add onions and
    chopped pineapple and suate until tender.
    5. Pour in tomato sauce and boiling water, add green peper, bay leaf and
    tobasco.
    6. Cover and simmer over warm coals until meat is tender. Blend in liver spread
    and cook for additional 5-7 minutes.

    * you can substiture lamb for dog. The taste is similar, but not as pungent.
    ** smooth liver pate will do as well.

    1 Carrots
    1 Onions
    1 Potatoes
    1 Salt
    1 Pepper
    1 Garlic
    1 Cornstarch


    You remove the shell by cutting it between the front and back legs (if you know where to slip the knife in at, it is rather easy) To fix the turtle make sure you remove all of the fat. It leaves a fishy/gamy flavor if you don't. Cut the feet off, they're not worth your time or trouble to fix. The eggs have a fishy flavor no matter how you fix them. I don't really recommend them. Besides, when you boil them (no matter how long), they don't turn solid like chicken eggs. Each piece is a quarter or thigh with a bone going down through the middle. Dredge the meaty pieces with flour and brown with your favorite oil in a skillet. Place the pieces of meat in a slow cooker, add a little water, carrots, onions, potatoes and some salt, pepper, and garlic. After it has cooked, you can thicken the juices with a little cornstarch and serve. You'd swear you're eating roast beef.

    1 white cake mix
    2 large pkg vanilla instant pudding mix, prepared (I like Bird's® dessert mix)
    1 large pkg vanilla sandwich cookies
    green food coloring
    12 small Tootsie Rolls®

    1 new kitty litter pan
    1 new plastic kitty litter pan liner
    1 new pooper scooper

    Prepare cake mixes and bake according to directions (any size pans).

    Prepare pudding mix and chill until ready to assemble.

    Crumble white sandwich cookies in small batches in food processor, scraping often. Set aside all but about 1/4 cup. To the 1/4 cup cookie crumbs, add a few drops green food coloring and mix until completely colored.

    When cakes are cooled to room temperature, crumble into a large bowl. Toss with half the remaining white cookie crumbs and the chilled pudding. Important: mix in just enough of the pudding to moisten it. You don't want it too soggy. Combine gently.

    Line a new, clean kitty litter box. Put the cake/pudding/cookie mixture into the litter box.

    Put three unwrapped Tootsie rolls in a microwave safe dish and heat until soft and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat with 3 more Tootsie rolls bury them in the mixture. Sprinkle the other half of cookie crumbs over top. Scatter the green cookie crumbs lightly on top of everything -- this is supposed to look like the chlorophyll in kitty litter.

    Heat 3 Tootsie Rolls in the microwave until almost melted. Scrape them on top of the cake; sprinkle with cookie crumbs. Spread remaining Tootsie Rolls over the top; take one and heat until pliable, hang it over the side of the kitty litter box, sprinkling it lightly with cookie crumbs. Place the box on a newspaper and sprinkle a few of the cookie crumbs around for a truly disgusting effect!

    Further notes: I had a reader write in saying this recipe only needed half the amount of pudding. I personally liked the cake with the amount given in this recipe. But feel free to use this as a loose guideline, use more or less as you see the need. Also, since the layer of cookies (with the chloropyll green specks, covers the top, you could really use any flavor or flavors or cakes underneath. Last but not least, you can also opt not to crumble the cakes, but rather layer them in the pan with the layers of pudding in between (much like you would layer a trifle into a trifle dish), sprinkle the top layer of pudding with a heavy layer of crumbled cookies. Same effect, different texture entirely to the dessert.

  • Way to harsh my mellow, misterhead. Speaking of which, if you're not camping, here's a good recipe for a S'mores snack at home.

    GOLDEN GRAHAM SMORES

    3/4 c. light corn syrup
    3 tbsp. butter
    1 pkg. milk chocolate morsels
    1 tsp. vanilla
    1 pkg. Golden Graham cereal (9 c.)
    3 c. miniature marshmallows

    Grease 9 x 13 inch pan. Heat syrup, butter and morsels to boiling stirring constantly. Remove from heat, stir in vanilla. Pour over cereal in bowl, toss until coated. Fold in marshmallows 1 cup at a time. Press into pan with buttered back of spoon. Let stand 1 hour. Cut into 2 inch squares. Presuming it's not 100° in your room, store at room temperature.
