Thing is ( personally ) the more realistic a character and his/her performance within the role and plot, the better the film and more interesting the story line etc.
Bond is an ex SAS soldier ( which makes sense within the 'real world' ), ex SAS guys are pretty tough. So it follows that his behaviour will reflect this especially within combat situations.
What should make Bond different to other ex SAS mercs is his intelligence and knowledge of high society ( so an old Kambridge student / ex special forces soldier fits the bill ).
I think the comparison to Bourne is a fair one, doesn't have to be a bad one. Whats interesting though is the question "what makes Bond different to Bourne?". -

i dont think this stuff is out of character for bond at all. in the books he was more brutal than the movies ever portrayed him.

But Roger Moore's Bond was hilarious... those films were retro kitsch cheesiness just begging to be spoofed. Craig is like the anti-Moore.

I think that Daniel Craig is an amazing actor, and it's quite admirable that he's been able to recreate the character in a way that draws an even larger audience into the Bond fan club. The change in the portrayal of the iconic James Bond reflects the changing values of our society, wouldn't you think?

Granted, Ian Fleming's character was a cold war instrument. But if you read Bond you will see that he was an harden assassin and cold blooded killer first. He was the best at his job because he was the best. Subsequently, only play for high stakes thrilled him ( women, gambling, etc.) then king and country second.
