A sad day for British cuisine. Mahmut Aygün, snack visionary and talented meat carver, has died of cancer at the age of 87, almost 40 years after permanently changing the drunken dining habits of millions. I'd like to take a moment of silence, then head to the pub and drink too much beer and then opt for a late-night kebab, half of which will end up on the front of my shirt, in his honour.

    • I have been eating döner-kebab many times. Interesting that it is actually a German invention by a Turkish man.

      Around Europe döner-kebab varies quite a lot. One of the things changing is the bread used. Often a thin hard pita bread is used, but usually in Germany a thicker soft bread is used, very good type.

      With Doner kebab biz, the Turkish and Middle easters have moved all over Europe.

      Then again, who said this is British! It is more like Turkish!

    • Just to clarify...

      Some Americans might be confused reading this, because the Turkish word for it - Doner Kebab - is not used very often in the US.

      We usually see them on the menu as Gyros (the Greek word for it) or Shwarma (the Arabic word for it) but all these describe the same thing. Meat roasted on a spit. Which is then traditionally served with pita bread as a sandwich.

      In America, Kebabs are FAR less popular than in the UK. They're more of a specialty here, than a late-night pub food. You can find them pretty easily in large cities (often as Shwarma at falafel joint or Gyros at a pizza place) and they make their way to smaller towns during street fairs in the form of Gyro Carts.

      I think that pizza is really America's hangover/late night/take-out of choice. But its a shame that specialty ethnic take-out like Currys and Kebabs are not as prevalent here in the US - as they're practically the "national dishes" of England. So good!

    • I've never actually had a doner kebab. Even on my wildest nights, the prospect of eating the shavings from a glistening elephant leg of slowly congealing meat has never appealed.
