In Food, Inc., filmmaker Robert Kenner lifts the veil on our nation's food industry, exposing the highly mechanized underbelly that's been hidden from the American consumer with the consent of our government's regulatory agencies, USDA and FDA. Our nation's food supply is now controlled by a handful of corporations that often put profit ahead of consumer health, the livelihood of the American farmer, the safety of workers and our own environment. We have bigger-breasted chickens, the perfect pork chop, insecticide-resistant soybean seeds, even tomatoes that won't go bad, but we also have new strains of E. coli — the harmful bacteria that causes illness for an estimated 73,000 Americans annually. We are riddled with widespread obesity, particularly among children, and an epidemic level of diabetes among adults.

Food, Inc. will be accompanied by Notes on Milk, a short variation of the 2007 feature documentary Milk in the Land: Ballad of an American Drink. Ariana Gerstein and Monteith McCollum, whose Hybrid aired on POV in 2002, take a quirky and poetic look at some lesser-known aspects of America’s favorite drink: the industry’s spiritual underpinnings, politics and the struggle of independent farmers.

As the Great Blizzard of 2010 blanketed New York City, most residents were blissfully unaware that their city’s 911 system was on the brink of collapse. The system fielded 50,000 calls in a single day, and at one point the backlog swelled to 1,300 calls. The mayor was called to account for the slow service and promised that it wouldn’t happen again.
But David Rosen and Bruce Kushnick report in AlterNet that New York’s close call is an example of a much broader and deeper problem. Cash-strapped state and local governments are raiding funds set aside for 911 service, and the system is hurting badly:
Hundreds of millions of dollars are collected annually by states and localities to support 911 services and much of it is diverted to plug state budget holes and meet a host of other demands. Most disturbing, 911 services are technologically bankrupt, held together by duct-tape and workarounds.
States siphoned nearly $400 million earmarked for 911 between 2001 and 2004. The law demands that the money, raised by a tax on every phone line, has to be set aside for 911-related services. Some states fudge the definition of “911-related” to fund things that had nothing to do with emergency services, like raises for courthouse staffers. Others just brazenly redirected the money into their general funds. New York collected $82.1 million in 911 taxes on phone lines in 2007, but only 19 cents out of the $1.20 monthly fee was spent on 911.
At least New York can account for its misdirected funds. South Dakota simply has no idea where its 911 money went, Rosen and Kushnick report.
Walker: Hurry up and die
Seemingly determined to cast himself as a Dickensian villain, Wisconsin Governor Scott Walker presented a budget last week that would slash millions in funding for health care for the poor and the elderly. However, as I reported in Working in These Times, Walker recommended an increase in funding for a program that buries Wisconsinites who die destitute.
Medicaid roulette
Some governors are clamoring for more control over Medicaid, the joint state/federal health insurance program for the poor, Suzy Khimm reports for Mother Jones. Currently, Medicaid funding is allocated primarily by a matching system, with the federal government kicking in a certain number of dollars for every dollar the state spends. The states must abide by federal rules in order to qualify. Now, some Republican governors want to see Medicaid funding doled out in block grants. The states would get a fixed amount of money, which they could spend as they saw fit.
Rep. Cathy McMorris Rodgers (R-Wash.), the fourth highest-ranking Republican in the House, is a leading proponent of this new scheme. She claims it would increase “flexibility” for states. In this case, flexibility is a euphemism for “massive cuts.” Washington’s Democratic governor, Christine Gregoire, has already convinced the Obama administration to exempt her state from certain Medicaid rules. McMorris Rodgers applauds the move.
Crisis Propaganda Centers
New York City City passed a landmark “truth in advertising” bill last Wednesday that would force so-called crisis pregnancy centers (CPCs) to disclose that they are not health care facilities. CPCs are anti-choice ministries posing as reproductive health clinics. Among other things, the law will require city CPCs to inform potential clients that they do not refer for abortions or emergency contraception, Noelle Williams reports for the Ms. Magazine blog.
The logic of our sex laws
The cover story of this month’s Washington Monthly is a provocative analysis of Dan Savage, America’s most influential sex advice columnist, as an ethicist of contemporary sexual mores. The author, Benjamin J. Dueholm, is a Lutheran pastor and a longtime fan of Savage’s syndicated column “Savage Love.” Dueholm does a good job of summarizing some of the core principles of Savage’s ethos: disclosure, autonomy, mutual pleasure, and personal commitment to achieving sexual competence. His central critique is that Savage’s attitude is too consumerist and businesslike.
I would argue that there’s nothing inherently capitalist about Savage’s ethics. Yes, Savage’s ideal sexual world is based on consensual, mutually beneficial exchanges, like an idealized free market–but that doesn’t mean that realizing one’s sexual identity, or finding true love, is on par with picking a brand of laundry detergent. In consumerism, the customer is always right. Savage is constantly urging his readers to be active participants in a mutually satisfying sex life, not passive consumers who expect their partners to cater to them without giving anything in return.
USDA hearts Michael Pollan
Every five years, the U.S. Department of Agriculture issues guidelines for healthy eating. Parke Wilde of Grist explains why this year’s edition is, in many ways, a radical and surprising document:
The new edition has a fascinating chapter on eating patterns, focusing on real foods and not just nutrients. This chapter on eating patterns provides a nice counterpoint to the reductionism — what Michael Pollan calls “nutritionism” — of scientific discussion of diet and health. The guidelines’ healthy eating patterns may or may not include meat. For example, the USDA Food Patterns and the DASH diet each include moderate amounts of meat and plenty of low-fat dairy. At the same time, the guidelines explain clearly that meat is not essential, and near-vegetarian and vegetarian diets are adequate and even “have been associated with improved health outcomes.”
This is a big departure for an agency that has historically been criticized for acting as a propaganda outlet for the livestock and dairy industries. But Wilde notes that, despite its enlightened discussion of the perils of “nutritionism,” the USDA hasn’t broken the habit of referring to nutrients rather than foods. The guidelines still recommend that Americans eat less saturated fat, without dwelling at length on which foods actually contribute most of the saturated fat to the American diet.
As nutritionist Marion Nestle explains in her seminal book, Food Politics, this mealy-mouthed advice is measured to avoid offending any lobby group that might take offense at the suggestion that Americans eat less of their product. There is no saturated fat lobby, but there are plenty of lobby groups representing the interests of industries tied to the major sources of saturated fat in the American diet, which include cheese, pizza, bakery products, ice cream, chicken, and burgers.

Wednesday is the heaviest travel day of the year in the United States, as millions of Americans head home to celebrate Thanksgiving. Some of you are probably reading this dispatch on PDAs as you wait in an interminable line at airport security. Here’s some food for thought.
At Grist, food writer Michael Pollan officially declares himself a Rules Guy. Don’t worry, that doesn’t mean he won’t accept a Friday dinner invitation offered after noon on Wednesday. Pollan thinks that our healthy eating skills are passed down to us as part of food culture. In this era of drive-through windows and meal replacement bars, a lot of the old wisdom is falling by the wayside and Americans are finding themselves adrift in a sea of calories. On the eve of Thanksgiving, Pollan provides some helpful guidelines for avoiding the food coma:
[M]any ethnic traditions have their own memorable expressions for what amounts to the same recommendation. Many cultures, for examples, have grappled with the problem of food abundance and come up with different ways of proposing we stop eating before we’re completely full: the Japanese say “hara hachi bu” (“Eat until you are 4/5 full”); Germans advise eaters to “tie off the sack before it’s full.” And the prophet Mohammed recommended that a full belly should contain one-third food, one-third drink, and one-third air. My own Russian-Jewish grandfather used to say at the end of every meal, “I always like to leave the table a little bit hungry.”
But wait, there’s more!
* Unions representing airline pilots and flight attendants are advising their members to avoid the the TSA’s new backscatter x-ray scans because of concerns about the long-term health effects of x-ray radiation. Crew members who refused scans have been subjected to new “enhanced” pat-down searches. This week, the TSA granted an exception to pilots, but not to flight attendants. As I reported for Working In These Times, all crew members go through the same FBI background check and fingerprinting process. “Don’t touch my junk!” has become a rallying cry for passengers, particularly white men, who are not accustomed to being asked to give up any part of their body’s autonomy for the greater good. Is it a coincidence that 95% of pilots are men and three-quarters of flight attendants are women? [Update: The TSA has relented. The agency announced Tuesday that flight attendants will now get the same exemption as pilots.]
* Adam Serwer argues in The American Prospect that it’s easy to demand tough security measures when the presumed targets are faceless Muslims in a distant country. When air travelers are asked to compromise their own privacy in the name of security, the tradeoff suddenly seems very different.
* Employee health insurance deductibles are skyrocketing at Whole Foods and CEO John Mackey is trying to blame the increase on health care reform. “This is very important for everyone to understand: 100% of the increases in deductibles and out-of-pocket maximums in 2011 compared to 2010 are due to new federal mandates and regulations,” Mackey wrote in a corporate memo. In fact, as Josh Harkinson reports in Mother Jones, Mackey’s memo is pure, organic BS. The provisions in the Affordable Care Act that might increase costs won’t go into effect until 2014, so it’s hard to figure out how federal policies could be responsible. Health insurance costs were rising by about 5% per year, year after year, before the Affordable Care Act passed. The truth is that health insurance is getting more expensive because health care is getting more expensive. As Harkinson points out, one of the reasons that health care is getting more expensive is because corporations like Whole Foods are pushing more of their employees into part-time work to avoid covering them. Of course, when those workers get sick, someone has to pick up the cost of their care. So those who have insurance, including some of Whole Foods’ own employees, have to pay more to make up the difference.

Maybe it’s time for environmentalists prioritize do-it-yourself climate fixes instead of looking to politicians. There are all sorts of options, including, for those dedicated enough, switching to an insect-based diet, as Change.org reports.
But in the private sector, inventors, corporations, and small businesses — farmers in particular — are finding more palatable ways to scale down their environmental impact. In short, politicians aren’t the only ones with the power to make high-profile statements and strong choices on climate change.
No solar on the White House
Environmental crusader Bill McKibben had already given up on Congress; now the White House has disappointed, too. McKibben and other leaders in the climate change movement are eschewing lobbying on legislation in favor of pushing for more visible, direct action on climate issues. To that end, McKibben, along with three students, asked the White House last week to reinstall one of Jimmy Carter’s solar panels on the roof. The answer was no.
McKibben describes the Obama administration’s response to his request as “uncool…Asked to do something easy and symbolic to rekindle a little of the joy that had turned out so many of us as volunteers for Obama in 2008, they point blank said no,” according to Truthout.
The administration officials that they met with, though, wanted to make sure that the climate activists knew something was being done to improve the country’s environment. They touted the president’s initiative to green the federal government—federal buildings in particular. One official, McKibben says, spoke more than once about a Portland, Ore., building that would soon have a “green curtain,” likely a hanging garden.
It’s not that McKibben disapproved. “Actually, it’s kind of great,” he wrote. “Still, I doubt many people are going to build their own vegetated fins.”
The talking cure
That’s the ultimate question: What will people build on their own? Solar panels could be one answer, although they haven’t quite caught on yet. There are all sorts of technologies, though, that could help us minimize our carbon footprint. Grist’s Ashley Braun checks out one new idea: drawing energy from sound waves:
Using that standby found in sunscreen, zinc oxide, to turn sound waves into electricity, these scientists have heard the bells of success starting to ring in their ears. Similar to other technologies aimed at harvesting energy from walking or dancing, this concept could also turn the roar of traffic into the hum of low-carbon electrons. How sweet the sound of renewable energy.
Scientists are considering using this technology in cell phones, creating, ideally, a device that would never have be plugged in, assuming, of course, that its owner used it frequently enough, and used it as a phone, rather than an e-mail/web-surfing/GPS device.
Go private?
Another option for climate reformers could be focusing on the private sector. Corporations have gotten the message that consumers buy green products, and more are churning out sustainable, climate-friendly offerings.
Care2’s Emily Logan points to Nestle, eBay, and Sunny D as three companies that have heard the green gospel. Nestle is investing in sustainable coffee; eBay is pushing out reusable shipping boxes; and Sunny D, the beverage company, met its zero-waste goal three years ahead of schedule.
“Of course, like most large corporations who are making efforts toward sustainability, some of these companies have a long way to go,” Logan writes. “But giving credit where credit is due is increasingly important when it comes to the environment.”
You are what you eat
The farm sector is one private industry that deserves more scrutiny and pressure. Recall that agriculture interests ran one of the most successful campaigns to be exempted from the cap-and-trade bill, when it was working its way through the House. Even among liberals, the industry has its defenders: local, sustainable agriculture just won’t work to feed the masses, the argument goes.
The problem with that line of reasoning is that we still haven’t seen how large sustainable farms can grow. Take Joel Salatin, the crusading farmer made famous by Michael Pollan’s The Omnivore’s Dilemma. Salatin has been running a successful operation, Polyface Farm, for years while relying on organic and sustainable methods. As David E. Gumport reports at Chelsea Green, Salatin’s farm has only grown:
Standing in front of a group of about 50 romping pigs, [Salatin] proudly revealed that Polyface has hit the the $2 million annual sales level, while sticking to Salatin’s policy of not shipping food outside a 100-mile radius. The effect, he says, has been to strengthen local businesses–everything from a local breakfast diner serving visitors to his farm to local feed and supply companies.
Salatin is convinced his methods can be used to feed the entire population. What’s certain is that there is room for more of this sort of growth in the agricultural system.
Here, too, would-be reformers run back into politicians: Salatin’s food safety practices are not exactly FDA-approved, and to reseed his methods elsewhere, the government would need to relax safety standards for smaller, alternatives operations.
But for now, this sort of effort, and others outside of Washington seem to be making the largest impact.

Everybody knows that the internet has a bacon fetish. It's one of the tastiest animal products, but as my friend the nutritionist says: "I love the smell of bacon in the morning. It smells like obesity." Some think this trend is coming to an end, but I'm not so sure. And that is what sparked this work of meme historical fiction.
Now to present you with the second piece of meme historical fiction ever written. This time Josh Heller has teamed up with darling of the genre, Andrew Fitzgerald to co-write this piece:
Bacon had retained it's grip over the internet for years. In the early days it seemed like a new bacon blog popped up every other day. Then on a fateful late summer morning, the New York Times released an article that changed everything. "It’s Hip to Be Round" claimed to show a new trend: male hipsters showing off their pot bellies. The moment this article hit the blogstands, the face of bacon as we know it.
Within hours hipsters around the world were mobilized. From the lofts of Williamsburg to the warehouses of Hackney emanded a change.
Historians time the start of the backlash to the destruction by looting and firebombing of the Brooklyn “offices” of popular “blog” This is why you’re fat. The rage of the thin was not to be contained just to that, the offices of Tumblr itself were next and authorities just barely rescued company founder David Karp from a slow herb-roasting in a health-conscious man-sized George Foreman Grill.
Within days, cooler heads prevailed, with such calming voices as writer Michael Pollan’s eventually drowning out the bloodthirsty (most notably Jonathan Safran Foer who famously called for Americans to “Burn down your McDonalds, Tear apart your Wendys, Rip your Arby's limb from pork-y limb...”). Pollan suggested that of all the high fat items to be singled out, perhaps bacon was the worst offender, and could be replaced. He suggested quinoa, a largely unheard-of grain.
Quinoanaise became a popular product for so-called "quinoatarians"
Within weeks items such as quinoa and eggs, quinoa cheese (veggie) burgers, and even the late night snack quinoa-wrapped hot dogs were available nationwide in great abundance. It was only perhaps six months later that a book deal was announced for popular FriendFeed account This is Why You’re Thin which featured many pieces of what the nutritiono-blogosphere termed “quinoaporn”.

very schoolchild learns about the mutually beneficial dance of honeybees and flowers: to make their honey, the bees collect nectar, and in the process spread pollen, which contains the flowers' genes. The Botany of Desire proposes that people and domesticated plants have formed a similarly reciprocal relationship. "We don't give nearly enough credit to plants," says Pollan. "They've been working on us – they've been using us – for their own purposes."
The Botany of Desire examines this unique relationship through the stories of four familiar species, telling how each of them evolved to satisfy one of our most basic yearnings. For many of us who are involved in the sustainable agriculture and food justice arena, Michael Pollan's presence has been so ubiquitous for so long that he's almost passé. He has served as the torch bearer for the sustainable food movement for most of the decade, and after his spring book tour for In Defense of Food and the release of Food, Inc. this summer, his message is quite familiar.
When I heard that he would be coming out with a new book, I almost doubted that he could possibly have more to add to the eco-foodie canon. However, when I picked up Food Rules: An Eater's Manual, I was impressed. Kevin Kelly summarized Michael Pollan's speach that he presented at the Long Now Series this past week:
"Making farmers cool again
Farming has become an occupation and cultural force of the past. Michael Pollan’s talk promoted the premise — and hope — that farming can become an occupation and force of the future. In the past century American farmers were given the assignment to produce lots of calories cheaply, and they did. They became the most productive humans on earth. A single farmer in Iowa could feed 150 of his neighbors. That is a true modern miracle. “American farmers are incredibly inventive, innovative, and accomplished. They can do whatever we ask them, we just need to give them a new set of requirements.”
The benefit of a reformed food system, besides better food, better environment and less climate shock, is better health and the savings of trillions of dollars. Four out of five chronic diseases are diet-related. Three quarters of medical spending goes to preventable chronic disease. Pollan says we cannot have a healthy population, without a healthy diet. The news is that we are learning that we cannot have a healthy diet without a healthy agriculture. And right now, farming is sick.
Pollan outlined what this recovery for American farmers and food producers should be. First a post-modern food system should be “resolarized.” Right now it takes 10 calories of fossil fuel to manufacture 1 calorie of food on average, and 55 calories to produce 1 calorie of beef. If any industry should be solar-based it should be food, which was the “original solar economy.” Instead, right now “we are eating oil.” Cheap oil and farm policies subsidize the 5 main crops (and only those crops), upon which the rest of our cheap food system is based. These main crops are planted as monocultures, which require cheap pesticides and fertilizers and produce wastes that are all problems in themselves. Pollan’s solution is not to dismantle the food system but to redirect it. Because of the long-term planning and learning that stewarding land requires, he believes subsidies of some type are essential for agriculture. Agriculture, he stated, should not be a freemarket. By picking the proper incentives we can re-localize, re-solarize, and revive the healing power of balanced farms and wholesome gardens....."Kevin Kelly summarized Michael Pollan's speach that he presented at the Long Now... more

The real price of fruits and vegetables between 1985 and 2000 increased by nearly 40 percent while the real price of soft drinks (AKA Liquid Corn) declined by 23 percent.
The Farm Bill essentially treats our children as a human disposal for all the unhealthful calories that the Farm Bill has encouraged American farmers to overproduce.
