Layered Pasta and Veggie Bake
Serves 8
A deliciously different take on white lasagna, with no cheese and big on veggies, here's a healthy, hearty and satisfying meal-in-one.
Ingredients
1 (10-ounce) box brown rice lasagna noodles
1 cup low-sodium vegetable broth
4 cloves garlic, chopped
1 pound yellow squash (about 3), chopped
2 yellow onions, chopped
1 cup finely chopped fresh herbs, such as basil, oregano and parsley, divided, plus more for garnish
1 cup 365 Everyday Value® Organic Unsweetened Almondmilk
2 (15-ounce) cans no-salt-added white beans, such as navy or cannellini beans, rinsed and drained
1 (15-ounce) package vegan ricotta (or make your own)
1 (16-ounce) package frozen broccoli, thawed
1 (16-ounce) package frozen spinach, thawed and squeezed of excess moisture
1 large tomato, diced
Method
Cook noodles per package instructions. Rinse in cold water after draining and spread out in a single layer to prevent sticking. Set aside. Preheat oven to 350°F. Heat broth in a large skillet over medium-high heat. Add garlic, squash, onions and 1/2 cup of the herbs and cook, stirring often, until liquid has evaporated, 20 to 25 minutes. Meanwhile, in a food processor, purée almondmilk, beans and vegan ricotta until smooth; transfer to a bowl and set aside. In a 9-x13-inch baking dish (this recipe makes a very full pan, so make sure your dish is at least 2 inches deep), layer lasagna as follows, scattering remaining herbs in between layers: vegan ricotta mixture, noodles, broccoli and spinach, noodles, squash mixture, noodles, vegan ricotta mixture. Top with tomato and bake, uncovered, until hot throughout, about 45 minutes; set aside to let rest 15 minutes. Cut into squares, garnish with fresh herbs and serve.

4 tbsp walnuts cut
350 g cooked whole grain screws
3 large tomatoes, sliced
a handful rocket
2 tablespoons fresh basil
1 clove garlic, crushed
4 tablespoons walnut oil
2 tbsp balsamic vinegar
execution
In a large bowl, mix all ingredients except
of garlic, oil and vinegar.
These materials to knock together and pour over the salad
Serve immediately

The last time Popeye hit the big screen, it was back in 1980 with Robin Williams as the iconic sailor man and Robert Altman behind the camera. That ended up a flop, albeit one that went on to become something of a cult, but now Sony hopes to do a little better with a CG ‘toon version of the character.
Unlike The Smurfs, which Sony is also dragging into cinemas, the new Popeye will likely be an all-CG affair, since Sony Pictures Animation is handling the film.
Producer Avi Arad is one of the driving forces behind the film, having been offered the chance to shepherd it by former Marvel man Scot Sassa, who now just happens to work for the company that controls the rights to the spinach-loving hero. "Scott called me and said, 'I have something for you,'" Arad tells Variety. "I literally started singing the famous Popeye song after securing the rights. What always blew me away is the level of the animation. It was so beautiful and unbelievably detailed."
The studio is refusing to release what the plot might be, though it’s reasonable to expect the likes of Popeye’s gangly lady love Olive Oyl, rival Bluto and adopted moppet Swee’Pea will all be part of the story.
Mike Jones, who is negotiating to adapt the script, is clearly a bit of a Popeye-dol worshipper. "I'm an unabashed, lifelong Popeye fan," he says. "Introducing this squinty-eyed sailor to a new generation also means reintroducing him to those who, like me, grew up with him."

Whole wheat crust and loads of veggies that include soy beans, spinach, red peppers, and onions. Okay, so I used a bread machine....close enough to homemade for me! I also used a marinara sauce, soy mozzarella cheese, and plenty of garlic.
