What Kind of Meat Should You Eat?
Practically everyone knows that being overweight raises your risk for diabetes... but I suspect far fewer people realize that simply eating processed red meats is also associated with a higher rate of this disease!
A new study from Harvard School of Public Health found that eating certain meats -- specifically processed red meat such as frankfurters, bacon and cold cuts (including roast beef, pastrami, ham, salami, bologna and corned beef) -- increases the risk for type 2 diabetes. The study also found that substituting healthier proteins significantly lowers the risk. While processed turkey, chicken and fish may well have their own deleterious impact, the Harvard study focused strictly on red meats. It was published online in the September 2011 issue of The American Journal of Clinical Nutrition.
Shocking Numbers
The researchers analyzed responses to questionnaires from more than 200,000 people, whom they followed for up to 28 years, and combined the information with data from existing studies of 442,000 participants. And what they found was that people who ate on average just 1.75 ounces of processed red meat per day -- for instance, a single hot dog or sausage or two slices of bacon -- had a 51% increased risk for diabetes. People who ate unprocessed red meat, such as steak, hamburger or pork chops, didn’t get off scott-free, but they could eat twice as much -- 3.5 ounces per day -- and their diabetes risk increased by far less (19%).
Now, if you would, think about how little 1.75 ounces of processed meat is... and how, with the typical American diet, you could easily exceed it!
What’s the Problem?I asked lead study author An Pan, PhD, a research fellow in the department of nutrition at Harvard School of Public Health, why such small amounts of processed meat create such a huge risk for diabetes. He explained that when we eat nitrates and nitrites, preservatives found in processed meat, the body converts them into the chemical nitrosamine, which has been shown (in animal studies) to be toxic to insulin-producing pancreatic cells. This is true even for some "uncured" processed meat, such as so-called "nitrate-free" and "nitrite-free" ham, which in fact may contain nitrites derived from celery powder added during production. "Also, the high salt content in processed meat can lead to activation of the sympathetic nervous system as well as activation of a hormone system that regulates blood pressure and fluid balance," Dr. Pan said, noting that both these systems are implicated in insulin resistance (a condition in which the body doesn’t respond properly to the effects of insulin and that is an important precursor for type 2 diabetes).
Then why does unprocessed red meat increase risk? That relates to heme iron, a type of iron prevalent in red meats (including processed ones), Dr. Pan told me. "Heme iron, in excess, can lead to insulin resistance and has been associated with type 2 diabetes in previous studies," he said, adding that heme iron can also cause inflammation, another precursor to diabetes. This happens when intake sufficiently exceeds the need for dietary iron.
Not-So-Nutty Solutions
If you’re wondering what to eat instead of red meat, there are plenty of healthful alternatives that bring about a dramatic reduction in diabetes risk if you switch out just one daily serving of red meat. For instance, the study found that you can significantly lower your risk for diabetes by substituting one daily serving of processed or unprocessed red meat for...
One serving of nuts.
One serving of low-fat dairy.
One serving of whole grains.
One serving of fish or poultry. (Note: The study did not distinguish between processed and unprocessed fish and poultry.)
Besides lowering your risk for diabetes and improving your health overall... you know what? You’ll look better, too -- because you’re likely also to lose weight!

My dear friend Unimatrix, I'm not a fan of conspiracy radio, but I'd have to allow that even stopped clocks are right twice a day.
The New Yorker reported this week that 40% of people in developed countries get cancer now. I don't know if that is just a factor of us living longer, or perhaps more likely our constant exposure to carcinogens and endocrine disruptors in everything from our plastic wrapped chemically laden foods, to airplane seats.I'd also agree that the poor suffer even more disproportionally in this onslaught of tainted foods and consumer products than the wealthy--although we are all exposed on daily basis to this to one degree or another.
The point that the public has been subject to a massive change in diet without the consequences of those changes being examined, is well documented.
It only took one big campaign contribution to Nixon's re-election to get high-fructose corn syrup into the American food supply without any study of its effects by having the Agriculture Dept. rather than the FDA approve it.
(Not that the FDA has been all that faultless either in some of corporate-driven Administrations we've had in the last thirty years.)
If one were to review all of the practices in factory food preparation in the US that are exempt from review from the stand point of health consequences one would likely give up eating all together.Yes, we should always be mindful of the source of "information" and always carefully examine purported "news" for exaggerations and distortions from various personal agendas.
Still, we have a duty not to throw the baby out with the bathwater.

I'm not terribly familiar with Mr. Jones, myself. I think I may have heard of few minutes of him while I was navigating coastal mountains without FM reception. But, as Nick 19 pointed out, Mr. Jones is one of those grandiose radio personalities who seem to confuse his fears and ramblings with verifiable facts.
The similarity between the two streams might be purely accidental.Still, and all, food safety, (like mental health and checking facts) is probably a good thing to be concerned about.

Well if you would actually site your sources we could tell if you're being truthful or not. I went and checked the Infowars site and here 's the quote, verbatim:
